It is one of the most important phases in the productive process: for this reason, we chose a slow drying process, between 15 and 24 hours depending on the type of pasta, with low temperatures enabling us to preserve all the sensory characteristics and the fragrance of the wheat.
Short pasta is dried on wooden frameworks whereas the longer kinds are placed on sticks and subsequently on carts; both are then left in static cells for all the time required until they are ready for packaging.
We create our pasta by mixing hard wheat semolina with the water provided by the local aquifer.
Water is, in fact, one of the fundamental elements to determine the taste of our pasta; for this reason, we exclusively use limestone-free water flowing from the streams of Monte Faito and this gives our pasta unique characteristics.
Our pasta is exclusively created with Italian hard wheat semolina, provided by carefully selected partners. Semolina is obtained by grinding hard wheat and it is what gives our pasta its characteristic yellow amber color and all the proteins, which are later transformed in gluten thanks to hydration.
Gluten is the main element of pasta: in fact, it determines flexibility of pasta during cooking and it also ensures it with a wonderful smell and just about the right amount of sapidity.
Gerardo Di Nola pasta is made only with bronze pasta dies that give shape to pasta coming through their moulded holes. The result is a pasta that is rough just at the right amount, enough porous to preserve a rich and lively texture and perfectly suitable to embrace sauce and condiments, making them stand out.
Also, pasta coming out of bronze dies is also different from any other pasta thanks to its opaque and raw colors.
All the packaging of our products is hand-made. Each and every pack of pasta is simple yet elegant and precisely folded and this allows us to follow each step of the productive process.
